My personal Recipes


Squash Puppies

1 lg. egg                                                 1 tbsp. sugar
1/2 tsp. salt                                          2 tbsp. milk
Dash of pepper                                   1/2 c. chopped onions or green onions
1/2 c. self rising flour                        1 cup mashed squash

Mix all ingredients together and drop by the teaspoon full into hot oil. Cook until golden brown. makes around 25 to 30 puppies.



Pull apart Biscuit cakes

3 cans of hungry Jack Biscuits                                   2 cups Brown Sugar
2 sticks butter                                                                  1 tsp. cinnamon
1/2 cup pecans                                                              

Cut biscuits into fourths put half in greased bunt pan. Cook sugar, butter, cinnamon and pecans. Stir while cooking . only cook for a few minutes. Pour over biscuits then place other half  of biscuits and repeat step. Place in over for 40 minutes at 300 degrees. Let cool for 20 minutes and serve.



Easy Cinnamon Rolls

1 can of biscuits                                         1/2 stick butter
1/2 cup cinnamon                                     1/2 sugar

Roll uncooked biscuits in melted butter then coat with mixture of cinnamon and sugar. Bake on ungreased cookie sheet at 375 degrees for 10 minutes. Then serve. makes 8 rolls.



Chicken Dressing
This is my Dads personal recipe.......


1 whole chicken ( boiled)                                                    Pan of corn bread
6 to 8 pieces of white bread                                              4 to 5 eggs ( boiled) and Chopped
1 quarter onion ( chopped)                                                 3 to 4 pieces of celery( chopped)
add sage or poultry seasoning to your taste                Salt and pepper to taste
2 cans chicken broth. Use more if needed (use low salt)


Break corn bread up in large pan along with the bread. Take onions and celery with chicken broth ( use 1 can) . bring to a boil cook for 15 to 20 minutes. Add juice and vegetables to corn bread . Add eggs and seasoning then add chicken or serve on the side. Bake at 375 degrees for 1 hour or until juice is gone and it's golden brown.
If making for a large crowd double ingredients



Stuffed bell peppers
I've made this many times my husband loves them.


4 med. bell peppers ( cut tops off and clean out)                1/3 cups minute rice
3/4 lbs. ground beef or chuck                                                  1 tsp. salt
1 egg                                                                                              1/4 tsp. pepper
1/3 cup water                                                                              8oz. can of tomato sauce
1 sm. onion diced                                                                          trim tops of bell pepper( diced)

Cut tops off and clean core out. Using a knife stab bottoms so juice can drain from peppers. Mix all ingredients using only half of the tomato sauce in mixture. Pack tight in peppers use remaining sauce mix with ketchup and top over peppers. Bake at 350 degrees for 1 hour. Make 4 servings.



Green Rice Casserole
I got this recipe from my Aunt June. She is a great cook.
1 bag of Broccolli                                            2 jars of cheese whiz
1 sm. onion ( diced)                                        1 stick of butter
1 can of cream of chicken                             2 cups Minute rice

Steam Vegetables for 15 minutes. Cook rice as directed. Melt butter then add onion cook until onions are clear. Then add cheese and soup. Mix all together. Add vegetables and rice. Make sure you mix well.  Pour mixture into 9 x 13in pan. Bake for 20 minutes or until edges are golden brown. Great with Chicken or pork chops.  





Hash Brown Casserole

2 lbs of Ore-lda hash browns ( Shredded Kind)                Salt and pepper to taste
1/2c. Chopped onions                                                            1 cup cream of chicken
1 cup sour cream                                                                    1/2 cup milk
8oz. grated sharp cheese                                                      1 stick of butter
Corn Flakes (opt.)

Melt 1/2 stick butter and pour into casserole dish.. Mix other ingredients and pour on top of butter . Top with crushed corn flakes. Dot with to rest of the butter. Bake at 350 degrees for 1 hour.
If your oven gets really hot while cooking bake 325 degrees for the same amount of time
Serving size is 1 cup for 6 people.



Fried Bar "Q" Chicken

6 pieces of Chicken                                         Self rising flour
Salt & Pepper                                                   1 bottle of Jack Daniels sauce
1 bottle of Bull eye ORG.

Batter chicken and fried as usual. place in a casserole dish pour sauce mixture over and bake for 45 minute or until done . Bake at 350 degrees.
These are great with chicken wings also.





Pecan Pie
This is my families favorite if I don't make this for the holidays I'm not invited to come to our families get together. LOL.....

3 eggs                                                                      3/4cups light Karo syrup
3/4 cups splenda Brown sugar                         2 tbsp. butter melted
( Firmly packed)                                                   1 tsp. Vanilla extract( real vanilla)
1 1/2 cup Chopped pecans                                  2 deep dish pie crust

Preheat oven to 350 degrees.  add eggs and blend until well mixed( looks like scrabbled eggs) Melt butter. Add sugar, butter, Karo, mix using your mixer then add pecans mix well and last add vanilla mix well . Pour into pie crust and bake for 1 hour . Cover pie crust edges for the first 25 minutes this will keep the edges from burning. Let cool for 30 minutes before serving. Makes 2 pies.
